What is your favorite thing to eat in the fall?

This is one of my staples, came from menumailer.net about three years ago.

 

Indonesian Crock-Pot Dinner

(actually original name says crockpot chicken indonesian but I took the liberty

of changing it cuz no chix is used in the recipe's veggie substitution version)

 

2 16-oz cans garbanzo beans, drained

1 15-oz can veggie broth (I use 15 oz hot water mixed with one cube of Knorr's

vegetarian vegetable broth bouillon)

3 Tbsp soy sauce

4-6 cloves garlic, pressed

1 1/2 Tbsp grated fresh ginger

3 tsp sesame oil

1/2 tsp cayenne pepper (or less depending on your heat index)

1/3 cup peanut butter

 

In a small bowl, combine soy sauce, garlic, ginger, sesame oil, and cayenne

pepper. Place garbanzo beans in a crockpot. Spoon sauce mixture over the top

of the beans. Cover and cook on low heat setting for approx 4 hrs. Stir peanut

butter in it until smooth.

 

I put this on top of white or brown rice (white has more of a color contrast)

and serve with broccoli (sauteed with a bit of sesame oil, crushed red pepper,

garlic, and salt and then put in a little water and cover to steam till the

green gets lighter) and a salad with homemade tahini dressing.
