Guest guest Posted September 25, 2007 Report Share Posted September 25, 2007 My 16 year old granddaughter is vegan, but refuses to take dietary supplements and I worry so much about her getting enough vitimin B. She came for dinner a few nights ago and I wanted to get some nutrition into the girl that she doesn't get from her normal diet of peanut butter, wholewheat toast an pasta with marinara sauce. Knowing she does not like eggplant, I made a great vegetable and bean casserole with a spicy tomato sauce. I steamed chunks of eggplant until tender, then liquified it in the blender and added it to the sauce. She loved it and got her vitimin B without knowing it. Now I am wondering if I can use liquified eggplant as part of the liqid to make rice. She actually likes the taste of it, it is the texture that turns her off.
