Guest guest Posted September 24, 2007 Report Share Posted September 24, 2007 Spanish Rice with green chiles 1 cup uncooked brown rice 1 cup chopped onion 2/3 cup diced bell pepper 1/4 tsp black pepper 1 can diced tomatoes (undrained) 1 small can chopped green chiles, drained and rinsed 1 tsp cilantro 1 tsp lime juice 5 1/2 oz (1 can) tomato juice OR V8 1 cup water Saute uncooked rice, onion and bell pepper in 2 Tbsp olive oil.
