Zucchini Pie Review

I made the zucchini pie yesterday. It was good but it wasnt as good as

I thought it was going to be. I didnt use any basil but did use fresh

chives. Seemed like something was missing to me. I used provolone

cheese in it as well. Anyone have any suggestions as to what else to

put in it? What about cheddar cheese? Dried tomatoes? Garlic? Please

dont say mustard greens. LOL I am curious as to how the rest of you

doctor it up, add or delete ingredients?

I used cheddar, parmesan and fresh basil, as called for in the recipe.

That went over very well. If I had it, I would have used gruyere. which

my kids love in cheese sauce and in the frittata I used to make.

I used the provolone as stated in the recipe along with the parm. It

was either basil, chives or parsley so I chose chives as I had them

fresh. Should that read basil, chives AND parsley? They certainly

could all be used at one time. :o)

 

Next time I will use the basil, chives too and mild cheddar to see if I

like that better. My housemate put sour cream on hers and just raved

over it. LOL Isnt it amazing how our tastes are so different? I

would never have thought to put sour cream on it. I am more of the

ketchup kinda gal. ;o)

I don't post often but I've been following the

zucchini pie thread and decided to make it yesterday.

I did add a grated carrot, and I used red onion since

I had half of a large one left over. I used 50%

reduced fat sharp cheddar and a parmesan/romano mix.

The biggest change I made was using chickpea flour

rather than regular wheat flour, because I had a bag

open that I'd like to use up.

 

I thought it came out very well. I bought the

chickpea flour for a zucchini pancake recipe awhile

ago and figured it was so wonderful in that, it would

be great in the pie as well and I was right. It adds

a very nice flavor and is a good choice for people who

are watching carbs.

 

I will definitely be making this pie again. I'm

reheating some for dinner as I type!

I add portobello mushrooms, Swiss cheese, or a sharp cheddar in mine as

well, even the DH likes it , as long as he never finds out there is

mushrooms in it :) I think a few sun dried tomatoes or even some fire

roasted peppers would be good in it as well, heck maybe even a poblano?

We have a dollar store here, that sells sundried tomatoes in olive oil, as

well as fire roasted peppers, and a huge selection of Asian condiments for 1

I got a 12 oz bottle of sesame oil for a dollar :) I was so shocked when

I saw the large assortment, chili sauce, plum sauce, tahini, oyster sauce, I

could go on and on. :) The label states it's organic, and I know the soy

milk they sell there for 1, I buy at walmart for 4.

Try a cheese with more bite to it, I think provolone cheese is very mild,

though I love it. I think the zuchinni needs something sharper to accent it

s milder flavors.

Hey Marcia,

Thanks for all the suggestions with the zucchini pie. I had it again

today for lunch and it tasted so much better than it did the other

day...like chili, it just got better. :o)

 

I am with you on the dollar store items you discussed. Its amazing.

Each week I stop at my dollar stores to check out what they have.

They have HUGE bottles of soy sauce at mine too. I have bought and

used the sun dried tomatoes (mine are dry, no oil), the calamata

olives, the Westsoy soy milk amongst so many other things. I love

being able to purchase a small bottle of sesame oil as it goes rancid

so quick even with refridgeration. I dont feel so bad tossing out a

half or a quarter of a bottle since its so little and cost so less.
