Guest guest Posted September 23, 2007 Report Share Posted September 23, 2007 Cake: 2 1/2 cups flour 1 1/4 tsp. baking powder 1 tsp. baking soda 2/3 tsps. nutmeg 2 tsps. cinnamon 1/4 tsps. cloves 1/2 tsp. salt 4 large eggs (or can use egg subs) 1 1/2 cups sugar 2/3 cups light brown sugar, packed 1 1/2 cups veg oil 1 lb + a little bit more of carrots (no measurement for the little bit ;o) ) peeled and grated Mix all ingredients and pour into a lightly oiled 9x13 pan also lined with parchment paper. Bake at 350° for 45 minutes. Let cake cool at least 2 hours before frosting. Frosting: 8 oz. yogurt 5 Tblsp. unsalted butter, softened (she used marjorine) 1 Tblsp. kefir 1/2 tsp. vanilla extract 1 1/2 cups confectioners sugar Combine all and chill over night. The put on cake (the frosting may even pour onto cake) (don't worry) Then put frosted cake into fridge to cool for another several hours, until thicker. :oP Oh so tasty!
