Guest guest Posted September 23, 2007 Report Share Posted September 23, 2007 Pumpkin-Date Nut Cookies about 4 dozen cookies 1 cup sugar 1/2 cup stick margarine or butter, softened 1 cup canned pumpkin 2 large eggs 2 cups all-purpose flour 1 cup chopped dates 1/2 cup chopped walnuts 2 teaspoons baking powder 2 teaspoons ground cinnamon 1/2 treaspoon ground nutmeg 1/2 teaspoon ground cloves Frosting is optional 1. Heat oven to 375 degrees 2. Beat sugar and margarine in large bowl with elec- tric mixer on medium speed about 3 minutes or until light and fluffy. Beat in pumpkin and eggs. Stir in remaining ingredients 3. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. 4. Bake 8 to 10 minutes or until edges are set. Imme- diately remove from cookie sheet. Cool completely on wire rack. Frost with your favorite frosting if you like. I like them with none. ______________________________\ ____ Boardwalk for $500?
