To replace fresh mushrooms: only add half of needed fresh mushrooms, as dehydrated mushrooms are much more tasteful. For example, if a recipe asks for 1 cup fresh mushrooms, only use 1/2 cup dehydrated mushrooms. Into a bowl, arrange 6 to 8 dehydrated mushrooms. Pour in 1 cup boiling water. Put a weight over mushrooms, to prevent them from floating on top instead of soaking in. Soak mushrooms for 40 minutes. Drain and then wipe dry mushrooms, using paper toweling. Remove hard stem end; cut mushrooms into 1/4-inch [6-mm] sticks.
