The zucchini pie recipe I made up for my Mom a few years ago, it was a combo of many recipes and it was/is her favorite recipe. She is in her final stages of dementia and I go each night to push liquids and pureed foods, she is refusing her food now. I made the zucchini pie last night and tonight I took her a slice and smashed it down with her liquid nurishment drink, she ate some of it. She recognized the taste, doesn't remember me but did the pie. I was really happy. I don't always feel like I keep things in check, I can tell you that, not with my life hard to keep together right now. I'm pretty much a master of strength though and push on. Listen, when you make the pie next time, very finely grate a carrot even a parsnip. Don't grate a potato, it makes the pie soggy. You can mix and match that recipe. I made the best soup last night. I have the recipe on the counter so I will get it posted by this weekend. It's vegan too and even better the next day. Have a good evening.
