Guest guest Posted September 19, 2007 Report Share Posted September 19, 2007 White Bean Supper Soup 1 onion, thinly sliced 1 large garlic clove, minced 1 tablespoon olive oil 2 cups vegetable broth 1 19 oz. can white kidney beans, drained, rinsed 1 pinch freshly ground balck pepper spinach, torn and equal to at least half of a 10-ounce bag, depending on personal taste grated Parmesan cheese Saute onion and garlic in olive oil until fragrant. Add broth. Stir in kidney beans and generous pinch of pepper. When hot, add spinach. Stir in grated cheese. Serves 2 to 3. Got a little couch potato? Check out fun summer activities for kids.
