Minted Green Peas with Lettuce

 

2 tablespoons butter

10 ounces frozen peas

1 tablespoon chopped fresh mint

2 tablespoons minced parsley, optional

salt and sugar to taste

mint sprigs for garnish

 

In a large skillet over medium heat, melt butter. Add

peas (breaking up

with a fork), cover, and cook until thawed (about 5

minutes).

Add lettuce, chopped mint, and parsley (if used) and

cook, uncovered,

until lettuce wilts. Toss occasionally. Season to

taste and garnish with

mint. Serves 4.

THIS LOOKS WONDERFUL...sorry dratted capslock...how much of which kind of

lettuce?
