Guest guest Posted September 17, 2007 Report Share Posted September 17, 2007 Minted Green Peas with Lettuce 2 tablespoons butter 10 ounces frozen peas 1 tablespoon chopped fresh mint 2 tablespoons minced parsley, optional salt and sugar to taste mint sprigs for garnish In a large skillet over medium heat, melt butter. Add peas (breaking up with a fork), cover, and cook until thawed (about 5 minutes). Add lettuce, chopped mint, and parsley (if used) and cook, uncovered, until lettuce wilts. Toss occasionally.
