I live in the Chicago suburbs and I am transitioning to a vegetarian diet (almost completely there already) primarily for ethical reasons, but the health benefits are attractive as well. I've just perused the September archives and am happy to see that you are such a generous and helpful group. I look forward to sharing ideas with you. I am also looking for some encouragement and support. As I've read here and you well know, I'll be dealing with questions from my family, friends and others as they learn of my vegetarianism. I love to cook, and I keep a small herb and veggie garden. I cook primarily from scratch with the freshest ingredients I can find. Right now, much of my veggie shopping is at the local farmers market, but I also shop at some local produce markets and Whole Foods. I also have some serious acid reflux issues, so unfortunately, no spicy foods, and no chiles of anykind for me. I find that soups are a great way to eat lots of veggies, particularly for lunches at work. One of my favorites is Cauliflower Soup with Poached Garlic Puree. It's in the Lidia's Family Table cookbook (not a vegetarian cookbook, but this recipe is). It's involved, because you make this savory potatoe both first, but this is something I tend to make over the weekend, then I spoon it straight into mason jars for work lunches. It's a very simple soup, and the success is all in the technique Lidia recommends. Now that I've read some of the boards, I am hungry for baked beans on toast.
