I guess I could go buy a bigger container of it.. You can make the custard filling with Silk stuff (what's it called if it isn't milk?), and worst case (like if you're taking it to a church supper, lol), you can substitute orange juice for sherry. There are many, many recipes out there and it is gorgeous in a real trifle bowl on a stand, or some pretty glass bowl that will show off the lovely layers of yum. My first thought was a bejeweled rice pudding (with candied cherries rather than raisins), but rice pudding is so unglamorous and I'm probably the only person on the planet who thinks " Rice pudding for dessert, wow! " Ah HA, got it. Google Pavlova. If this is served in the USA, it will be glamorous and exotic. The down side is that I cannot for the life of me figure how you can make meringue without egg whites. But a gorgeous Pavlova with freshly whipped cream and whatever fruit is in season (well, apples just don't work in it, imo)....It is VERY easy to make (use waxed paper or parchment paper to line the cookie or baking sheet and it will slide right off) and looks very posh and impressive. Yet another reason to nag the husband into getting the oven element. Here's the link to one site with a great photo of a Pavlova and recipes. They really are wonderful. Oh goodie, the oven doesn't work so now I cannot make a rice pudding. Phew, I was afraid for a moment there that I'd have to go make one or go totally nuts thinking of it all night long. Drats, except for the fact I can make it in a covered baking dish in a skillet of hot water on top of the stove. Nooo...do not need rice pudding...rice pudding is not my friend...nooooo pudding....
