I mean would thawed out frozen " meatless " patties (Boca burger) work?<< I've never used a " helper " meal, ever, *but* I have *lots* of experience substituting for ground beef and chicken in " normal " recipes, and " getting away with it " , (meaning serving the dish to meat eaters without them knowing the difference.....). In the green bean casserole recipe, I described cooking tofu to resemble ground beef. Well, I've used that " tofu-burger " in " Manwich " and it turns out great. I've also used Boca and/or Morningstar crumbles in Manwich and they work just fine. But there are two things I'd recommend about this: 1) remember that ground beef does not fall apart and soften the way the " tofu-burger " and/or soy crumbles will as they are cooked in liquid. Therefore, add your subsitute at the last possible minute, allowing just enough time for it to heat up. 2) for using the " crumbles " etc, I've used them frozen because of the fact in #1... and before there were " crumbles " I took frozen burgers, can't remember the brand maybe morningstar, let them thaw slightly, and the put them in the blender/food chopper, to make my own crumbles... I've also marinated tofu in tamari sauce, overnight, to give it some sort of strong taste and then used it crumbled (and browned) in recipes that call for ground beef. Likewise, if a recipe calls for *chopped " cooked chicken, I've marinated tofu with vegetable boullion cubes, then cut the tofu into little chunks the size of what they're asking in the recipe and brown the tofu a bit till it gets a bit " firmer " . You can use it as is for crumbled beef, or use a binder like egg and/or bran to form chunks. Harry >>Hi all!
