Guest guest Posted September 13, 2007 Report Share Posted September 13, 2007 Congratulations Anita! I am not wholly vegetarian either however my meat consumption has severely diminished. I was diagnosed with osteo arthritis and another form of auto immune inflammatory arthritis (they still dont know which type) about a year ago...I couldn't get out of bed, couldn't get dressed, was in chronic pain day and night. I did some research and started listening to my body. When I ate meat, I felt bloated, uncomfortable...like there was a rock stuck in my throat. I researched and found that meat, especially red meat, are inflammatory. I decided to join this group, I asked a lot of questions from my students who are vegetarian (I am a veterinary nurse at a veterinary school)and have become almost 100% vegetarian. I do eat chicken once in a great while and occasionally fish. My chronic pain is almost none existent, my joints are no longer swollen and painful like they were. Usually with the weather change, I agonize...I miss work but so far, so good, not this year! I continue to feel so much better, I am dropping weight and feel better about myself knowing what I am putting into my body is so much more beneficial for me. I noticed the biggest difference with my pain when I finally took the plunge and bought/ate some yucky kale...yep, that's what I called it....yucky kale. I made it in all sorts of ways. Mostly I just steam it and drizzle it with some apple cider vinegar or chop it up raw in my salad, I add it to my lentil loaf, I make kale salad, kale pie. LOL I eat KALE! I eat some amount of kale every single day. As I researched, kale and spinach are mentioned over and over again to have anti-inflammatory tendencies. I have since found swiss chard and collard greens quite delicious as well. I find myself adding greens to anything I can. (they arent too good in yogurt! LOL just kidding(o:) Greens, hemp, nutritional yeast, flax, if I can get it in my diet somehow, I do. Flax is a natural anti-inflammatory I know....I also supplement with flax oil capsules. I recently bought some dried sea weed and have begun sprinkling that on my salads to increase my iron as mine is very low too. I supplement 3x a day for it. My disease and my medications play havoc on my bone marrow. I am hoping to possibly go off my strong meds or at least be able to decrease them significantly in the future. I am rambling, sorry this is so long. I just wanted to say that I too feel soo much better since decreasing my meat consumption and have hopes of letting the drugs in the drug store. And what do you do with it? I am like you. I too will have chicken and fish. Here is a funny story. My husband and I used to go to this restaurant and I would get half of a fried chicken and he would get the large size prime rib and we would share. Well recently we were at the restaurant, and laughed and ordered our old order. WELL WE could NOT EAT IT!!!!!!!! LOL LOL LOL -- it had been a favorite of ours for years. NOW I told him that eating right has sure changed our lives!!!!! I buy my kale in the produce area of the grocery store. It can also be purchased frozen. I prefer using organic/fresh (if I can get it) as I can do with it what I wish. It holds well in the refridgerator, meaning it doesnt spoil as quickly as, lets say, lettuce. I bring mine home, wash it well and put it in Ziploc bags with paper toweling to hold the moisture. I dont de-rib it or cut it up until I am ready to use it as studies have shown that veggies that have been cut dont hold their nutrients as well. Good luck with your kale.
