Guest guest Posted September 13, 2007 Report Share Posted September 13, 2007 HAZELNUT SOUP 1 ONION 1 POUND OF POTATOES, PEELED AND DICED SALT AND PEPPER TO TASTE 3/4 CUP FINELY GROUND HAZELNUTS 1 T. SOY SAUCE with 1 T.WATER 1 GARLIC CLOVE 1 QUART VEG. STOCK OR WATER 1 T. LEMON JUICE garnish- chopped chives -Saute the onion in the soysauce/water mixture until lightly browned, then add the potatoes, garlic, and salt and pepper. Cook on med-high for about 5 minutes. -Add the stock or water, bring to a boil. Simmer (covered) for 25 minuted, until the potatoes are tender. -Add hazelnuts, lemon juice, and more salt and pepper if needed. -Let cool a little, then blend in blender until smooth. Garnish with chopped chives if desired.
