Tonight we were totally meat free again, but I need to get rid of all the carbs too, and there is no reason we need to eat all the carbs. Whole grains are important for good nutrition. The bad carbs are the ones you want to avoid - basically, they are any processed foods that contain white flour or another ingredient that is not in its original form (oatmeal in its original form is steel cuts oats, rice in its original form is brown, cornmeal was once corn, etc.) Sticking with whole foods in their original form is always your best bet... but maybe those are the kind of carbs you were referring to? I would recommend The Vegetarian Sports Nutrition Guide: Peak Performance for Everyone from Beginners to Gold Medalists by Lisa Dorfman. I've read most of the other vegetarian/vegan books, but this one is much more technical in its approach to how many carbs, proteins and vitamins you need depending on how active you are (sedintary right on up).
