When I was a kid, I loved a casserole that my family made that was pretty simple, it was cooked hamburger on the bottom, green beans sprinkled with " soy sauce " , with cream of mushroom soup poured over the top and baked, and part way through the baking, you'd throw on some chow-mein noodles (the crispy ones) on top. Well I created my own vegetarian version of this.... here goes. 1 lb firm tofu 1/4 cup tamari sauce (use low sodium!) 2 Tbsp garlic powder 1 Tbsp onion powder 1 14.5 oz can green beans 1 can condensed cream of mushroom soup 1/2 cup roasted sunflower seeds rinse and drain tofu. cut into fourths and press between paper towels to squeeze more water out of it. you want this to be as dry as possible. when the tofu is dry, mash with a potato masher until it resembles the crumbs that cooked hamburger makes. oil a big skillet (i've never tried this with a non-stick skillet, not sure it would work right) put in mashed tofu, tamari sauce garlic powder, and onion powder mix and cook until tofu is cooked completely through/ " browned " . The idea is that the tofu is the hamburger substitute, so it should have that texture/consistency when done. Grease a casserole dish. Layer the cooked tofu, then the green beans, then the cream of mushroom soup,(as is, not mixed with h20) bake at 350 for 20 minutes. top with sunflower seeds, bake another 10-15 minutes until bubbly. Serve over noodles or rice. Please note the amount of tamari, garlic powder and onion powder are approximate. I know I use at least that much, but probably more.... hope you enjoy this.
