This is a good filling for thumbprint or other

types of cookies.

 

Date Paste

 

1/2 pound of pitted dates

1/2 tsp grated organic lemon peel

ground nutmeg to desired taste

ground cloves to desired taste

water

 

Combine the dates and other ingredients with water to

cover in a glass saucepan or stainless steel. Cover

and soak overnight ( hence the long prep time)

Bring the mixture to a boil, turn heat to medium low,

simmer about 15 minutes continually stirring.

Mash the dates as they soften by pressing into the

bottom of your saucepan.

Cook until the mixture is thick as jam. Cool, cover

and refrigerate.

This will keep up to two weeks in the fridge.
