Oriental Garden Pilaf 1-1/3 cups veggie broth 2/3 cup quick cooking barley 1 Tbs. Oil 1/2 cup thinly sliced carrots 1/2 cup thinly sliced celery 1 clove garlic, minced 1/2 cup sliced mushrooms 1/4 cup sliced green onions....(didn't have on hand, used Vidalia) 1 -2 Tbs. Soy sauce In medium sauce pan, bring broth to a boil. Stir in barley, reduce heat. Cover and simmer for 10-12 minutes. Or until tender. In large skillet, heat oil. Cook carrots, celery and garlic over medium high heat 2-3 minutes. Add mushrooms and green onions. Continue cooking for 1 minute. Add cooked barley and soy sauce, mix well. Continue cooking over medium heat until heated through. 4 servings. (Good source of fiber. Naturally low fat, sodium free, cholesterol free) And easy and quick to make.
