Well tonight I served my 9 year old daughter the Haystacks recipe

from the files, they were VERY well received. lol But they are

pretty much 'nachos'. What can I say, it's Friday night! I had

been doing the Meatless Monday thing for a long time now but now I

have upped it to two meatless days a week. And am emilminating red

meat from our diet.

I made gacumole dip to go with the haystacks, and although at first

my daughter was suspicious, she did take a bite. She then announced

that she loves gacumole and I had to fight her for the rest.

Today I ate lunch with her at school and there were two other girls

from her class who were at our table. They had both taken the salad

as they didnt want the two different sandwich choices. BUT they

wouldn't touch the salad. This started a conversation between my

daughter and them, they wont eat lettuce, they wont eat broccoli,

they wont eat carrotts, they wouldn't eat the pineapple chunks

served or the kiwi, etc, etc. They did drink the chocolate milk and

cookie. That was their lunch. My girl has been less then thrilled

some nights to see beans on the table but I have to give her

credit, she is a good vegetable eater. If nothing else she will

eat veges raw (with Ranch). But sadly, these two girls today are

probably pretty typical of American kids.

This summer a friend's teenage daughter announced at a picnic that

she was a vegetarian. Well this intrigued my cousin who started

asking her what she eats. Well, she wont eat vegetables and doesn't

like much fruit. She eats a lot of cheese pizza. My cousin laughed

and told her to be a vegetarian she needs to eat vegetables. That

she is a 'pizza-arian' and that isnt very healthy.

But a big thank you to the kids recipes in the files. Nice to have

some easy things that my daughter will happily eat.

Hey Kandi,Try the cuban cigars. They are fabulous. My carnavore husband is

worse than any kid and he loves them.

The Haystacks are a staple in our house. I'm glad you enjoyed them. It takes

no time to make and

are quite tasty and satisfying. My kids will make them for any meal of the

day. I grew up eating these at picnic's, campouts

and quick meals at home.
