I thought about par boiling them first next time before trying to peel them. Julie Sandy and all who are interested in canning, this year I am going to make Watermellon Pickles. I finally found just the right recipe. In our area we grow wonderful mellons and I was always reminded that the inner rind goes to waste, and knew an aunt once pickled it. If anyone has any hints for making this particular recipe please let me know. Sure wish I had some green pepper jelly for St.Patty's Day. Darn ! I have read the posts on canning and the redicule that some have endured regarding their efforts and I am extremely sorry that these individuals have had to endure this type of censure. I have been canning for 30 years and honestly haven't had anything that I feel more rewarding. I had a lucrative carreer in nursing for more than 20 years and enjoyed that emensly but when I have those jars of food that I have harvested from my garden ready to be eaten all winter ------ that is a feeling of accomplishment. We live in town with a regular city lot and we have found that we are almost self sufficient if we carefully plant and harvest and CAN---the freezer is just too small so I dedicate it to those things that are not kept well by canning or drying. I really believe that we can be more independant if we take responsibility for our own health and sustinance-----I really love to read the posts so pls keep them coming. Just know that you have to follow your heart and DO NOT PAY ATTN. to those that think everything must come from the supermarket----Sorry but I can not figure out how to spellcheck with this one----- Thanks for listening Nancy from N.
