Parsley Potatoes 20 potatoes, small, red water to cover 1 tsp lemon juice 2 tsp butter 2 tbsp parsley salt and pepper to taste Wash potatoes. Place the washed potatoes in a medium pot and cover with cold water. Bring to a boil. Add salt. Lower the heat to a simmer. Cook until fork tender. Drain the potatoes. Allow to cool for a few minutes. Halve them and sprinkle with the lemon juice. Place the potatoes in a bowl and toss with parsley, butter, salt and pepper.
