I eat this all year round. I bake it up in a

casserole dish and it's good heated up for breakfast

also.

 

Herbed Mushroom Stuffing

 

1 lb. mushrooms

1 1/2 cups chopped celery

1 cup chopped onion

1/2 cup butter or margarine

1 package 97 oz. herb seasoned bread crumbs

1/2 cup vegi broth

1 egg, lightly beaten

 

Rinse, pat dry and slice mushrooms. In a skillet heat

butter. Add mushrooms, celery and onions and saute

until golden. Toss mushroom mixture with breadcrumbs.

Stir in broth and egg. Spoon into medium casserole

dish, cover with foil and bake 45 minutes on 350.

Yields about 2 1/2 quarts.
