Guest guest Posted September 2, 2007 Report Share Posted September 2, 2007 Carolyn - here are some more leek recipes from my files: First - from my German cousin: Traute's Poreesalat (Leek Salad) 2-3 leeks 1 jar grated celery root salad**, drained 4 hard boiled eggs, chopped (optional) 2 apples, grated 1 cup. mayonaisse, regular or fat free 1 cup fat free plain yogurt 1 or 2 cans mandarin oranges, drained Slice the white and pale green parts of the leeks into very thin rings. (Save the darker green parts for another recipe.) Stir in next 5 ingredients. Gently stir in the oranges, taking care not to break them too much. **If you can't get the celery root salad, substitute 1-2 cups of grated kohlrabi, jicama, or thinly sliced celery stalks. ************************************************ Welsh Glamorganshire 'Sausages' - Selsig Morgannwg Serves 4 5oz (150g) fresh breadcrumbs, plus 3 - 4oz (75-100g) for coating 1 small leek, finely chopped 3oz (75g) Caerphilly cheese, grated 1 tbsp fresh parsley, chopped pinch of dry mustard 3 eggs milk for binding (optional) flour for coating oil for frying 1. Mix together the breadcrumbs, cheese, parsley, seasonings and mustard. 2. Beat together 2 eggs and 1 yolk and use this to bind the mixture, adding a little milk if the mixture is too dry to hold together. Divide into 12 portions, form into sausage shapes and roll in flour. 3. Beat the remaining egg white until frothy, brush this over the sausages then coat them in the extra breadcrumbs. Chill for 20 minutes. 4. Fry gently in oil until crisp and golden brown on all sides. Serve immediately *********************************************** Leek and Potato Rosti (Swiss hash browns) 2 large potatoes, peeled 1 small leek, washed Grate the potatoes and mince the leek, and mix together with a bit of salt and pepper if desired. Divide into four. Fry over gentle heat shaped into a disc in a metal pastry cutter. Turn once to cook both sides.
