Guest guest Posted September 2, 2007 Report Share Posted September 2, 2007 Fresh Basil Cheese Spread 1/2 cup sliced almonds 1/2 cup loosely packed fresh basil leaves 1 tbsp. fresh lemon juice 1 green onion 1 garlic clove 2 pkgs. 8 ozs, each, cream cheese, softened 1/2 cup freshly shredded Parmesan cheese 1/4 cup olive oil sliced almonds for garnish assorted crackers red and green grapes Bake almonds in a shallow pan at 350 degrees, stirring occasionally, 6 minutes or until toasted. Cool. Pulse almonds and next 4 ingredients in a food processor until minced. Add cream cheese, Parmesan cheese, and oil; process until smooth. Spoon into a 3 cup mold lined with plastic wrap. Cover and chill 1 hour. Unmold onto a serving platter; remove plastic. Garnish, if desired. Serve with crackers and grapes. Makes about 3 cups.
