Guest guest Posted September 1, 2007 Report Share Posted September 1, 2007 I have made a " boob " with my online grocery order and find myself with an abundance of leeks and potatoes (thankfully not the 7 huge bags of potatoes I received one time, but still, lots!) and I wondered if anyone has any TNT leek and potato soup recipes they could send in so I can make use of the contents of my veggie drawer? Guest guest Posted September 1, 2007 Report Share Posted September 1, 2007 You are so lucky! Not, perhaps as lucky as me, where leeks are about $2 US per KILO, but still lucky. Leeks are lovely just by themselves. Trim off roots and and brown parts. Take off the outside leaf. Put all this in the compost. Slice the leeks lengthwise, and then into lengths as long as you like. Wash in a colander under running water, being particular to get all the dirt out of the join between the dark green and white sections on the outer leaves. Steam for a few minutes - maybe 5-6. Toss with a dab of butter, or your favourite indulgence.
