Tempeh Lemon Broil

 

Good with salad and crusty rolls for lunch, or with

potatoes and green beans or peas for dinner.

 

2 8 oz. packs of any style tempeh

1 medium onion sliced into thin rings

1/3 cup lemon juice, freshly squeezed

1/3 cup olive oil

1/4 cup soy sauce

4 large cloves of garlic, pressed

 

Cut Tempeh into thin squares as shown.

Arrange Tempeh squares in a glass 9 " x 13 " baking

dish.

Mix in a small bowl the lemon juice, olive oil, soy

sauce and garlic.

Place onion rings over Tempeh squares and pour lemon

juice mixture over everything. Marinate 4 to 6 hours,

basting occasionally.

Bake at 400 degrees for 25 minutes. Turn Tempeh pieces

and broil for final 5 minutes of cooking. Serve hot,

garnished with fresh parsley and lemon slices.
