Spicy Lentil-Potato Stew

 

1/2 cup lentils, uncooked

1 cup chopped carrots

1/2 cup chopped celery leaves

1 tbsp. chili powder

1/2 tsp dried basil

2 cups tomato juice

2 medium taters, don't peel

1/4 cup chopped celery

3 cloves garlic

1 cup chopped onions

1/2 tsp dried oregano

3/4 cup water

 

Throw it all in a pot and bring to a boil. Cover,

reduce heat, and simmer unti; vegies are tender, about

45 minutes.
