Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 Couscous a la Mushrooms 3 cups vegetable stock 2 cups quick-cooking couscous 3 green onions, thinly sliced 4 tablespoons toasted pine nuts 1/2 cup thinly sliced mushrooms minced parsley for garnish In a large saucepan over medium-high heat, bring stock to a boil. Stir in couscous, onions, nuts, and mushrooms. Immediately remove from heat, cover, and let stand until liquid is absorbed (5 minutes). Serve garnished with parsley.
