Stuffed mushrooms - vegan appetizers

Stuffed mushrooms

 

2 lb white champignon style mushrooms (the larger you can find)

Bread crumbs (about 1 cup)

1 cup minced defrosted frozen tofu (optional)

A little olive oil

1 large onion, minced

½ cup minced parsley

Mushroom stems, minced

1-2 tbsp light colored miso

3-4 cloves Garlic

Parmesan for top (optional)

Sesame seeds for top if not using parmesan

 

Procedure:

Detach stems from caps. Sautee Onion in olive oil, add stems and

garlic until cooked. Add bread crumbs, parsley, miso and salt when

almost done. Place stuffing inside mushrooms caps. Sprinkle

parmesan on top or sesame seeds. Oil baking pan and bake at 350

until done (about 30 minutes)
