Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 Salad spring rolls (V) Juice of 1 lime Silver cellophane noodles, soaked in warm water Shred ½ cup each: carrot, radish (opt), spinach, scallion Shred 1 cup combined: cilantro leaves, mint, basil ½ cup chopped roasted peanuts Julienned firm tofu Minced fresh ginger (1TBS) ½ Polynesian peanut instant paste or make own: 1 tsp sugar, ground peanuts or peanut butter, juice of 1 lime, 1 TBS tamarind paste 1 tbs salt Wrapper: round Rice paper rounds Moisten several clean towels and place rice wrappers in between damp towels. In the meantime, place all sauce ingredients minus peanuts in blender with just enough water to allow blending (in needed). Pour sauce in bowl. Chop peanuts (i prefer manually with large mortar/pestle) allowing some chunks to remain among fine powder. The fine powder will thicken the sauce and the chunks will give crunch and texture to the spring rolls. Prepare filling ingredients. Drain cellophane noodles from soaking water. Shred, chop and julienne all ingredients. Check wrapper to ensure that it is soft and pliable. Fill wrappers placing lettuce or spinach leaves, cellophane noodles, sauce, julienned ingredients and more sauce in small mound in middle of circle. Fold top quarter over filling, tuck in sides and fold bottom portion moistening seam to seal if needed.
