Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 Stuffed grape leaves -This is my version, based on the canned dolmas, which I find too oily – these have little oil and a wonderful herb aroma – the white beans disappear into the filling but increase the nutritional value- 2 cups almost-cooked rice 1 bunch chopped scallions Grape leaves ~ 36 ½ cup Pine nuts ½ cup each chopped parsley and mint 1 cup diced Celery Lemon juice (1 large or 2 small) Lemon rind 2 tbsp Olive oil (optional: ½ cup cooked white beans – coarsely mashed) Salt to taste Sautee celery and scallions in olive oil, add pine nuts, rice, and optional white beans, stir until all is cooked and rice is warm. Turn heat off and add rest of ingredients (except for grape leaves). Wrap filling in grape leaves (like a spring roll) using two leaves if necessary.
