Jicama Slaw with a Twist of Lime

1 pound jicama, peeled and cut into thin strips

1 red onion, thinly sliced

12 mini carrots, thinly sliced

1/2 seedless cucumber, cut into thin strips

1 cup fresh parsley, coarsely chopped

1/4 to 1/2 cup fresh dill, coarsely chopped

DRESSING:

1/2 cup apple cider vinegar

3 tablespoons flax seed oil

4 to 8 garlic gloves, minced

Juice of 2 limes

1 packet sweetener

 

 

 

 

In a large bowl, place the jicama, red onion, carrots,

cucumber, parsley and dill and toss to combine.

 

Place the vinegar, flax seed oil, garlic, lime juice

and sweetener in a jar and shake well. Pour over the

salad mixture and toss. Refrigerate and toss often to

blend the flavors before serving.

 

Serves: 8

Preparation time: 15 minutes

Total time:20 minutes
