Guest guest Posted August 28, 2007 Report Share Posted August 28, 2007 Roasted Garlic Vinaigrette 2 tablespoons chopped shallots 1/3 cup white wine vinegar 1 teaspoon dijon mustard 1/2 teaspoon salt 1 pinch white pepper 1 egg white 6 garlic cloves 1 cup olive oil Roast the garlic cloves in a 360 degree oven until softened and lightly browned. In a food processor, process all ingredients except oil. While motor is running, add oil in a thin stream until emulsified. Serves 12. Fussy? Opinionated? Impossible to please? Perfect.
