Guest guest Posted August 27, 2007 Report Share Posted August 27, 2007 Tamale Today Cassarole Filling: 2 large onions 15 cloves minced garlic 3 cups cooked pinto beans 7 cups diced canned tomatoes 2 cups frozen corn 2 cups minced green olives, with or without pimentoes 2 cups cottage cheese 4 tsp. oregano 4 tsp. gr. cumin 1 bunch cilantro, chopped 1 tsp. salt Mix ingredients and spread in oiled glass pan, 9 " x 13 " so pan is 1/2 full. You may have quite a bit left over. In fact it will probably make 2 recipes. Topping: Preheat over to 425F 2 cup flour 2 cups corn meal 1 tsp. baking soda 3 tsp. baking powder 2 Tbsp. organic sugar 2 tsp. ground flax seeds 1 tsp. salt Mix and blend in: 2 cup buttermilk 1/2 cup ghee Mix and pour over filling.
