Chayote Bread recipe

I made this up with a mixture of ingredients from 3 of

my favorite sweet bread recipes.

 

Chayote Bread

Makes 2 8X5 loaf pans

 

3 large eggs

1 3/4 cups sugar (I use raw sugar)

1 cup vegetable oil

2 cups peeled, grated chayote squash (press water out

of grated chayote in a colander)

3 tsps. vanilla (I use the real thing)

3 cups flour

1 tsp. salt

1 tsp. baking soda

1 /4 tsp. baking powder

2 tsps. cinnamon

heaping 1/2 tsp. cardamom (don't level it off)

1 cup chopped walnuts (optional) I use them but I know

some people don't care for nuts in their bread

Add raisins if you like, they are also good in this

recipe.

 

Preheat oven to 350 and grease & flour loaf pans.

Beat eggs until light and foamy. Add sugar,oil,

chayote and vanilla. Mix lightly, don't over beat.

In a second bowl mix dry ingredients, add to the

chayote mixture and again don't over beat. Stir in

the nuts. Pour into prepared pans. Bake 43-50

minutes. Test with a toothpick after 43 minutes to

make sure it's done. Remove from pans and cool on

wire rack.

I'd never heard of that squash & decided that it must be too exotic for my

Arkansas Walmart to have it. I saw it today at my Walmart! I can't find

hoisen sauce, capers or barley flour though. I looked through all the

flours today & the only exception to white flour was wheat flour, bread

machine flour & organic wheat flour.

I'm going to the big town this weekend! I've already told dh that we are

going SOMEWHERE! I'll be looking for Tofutti stuff too.

Rhoda, I forgot where you are in Arkansas. I'm in Springdale. If you're

in northwest Arkansas, check Ozark Natural Foods (Fayetteville) or Mary's

Health Foods (Springdale) and I think there's some health food place on 8th

Street in Rogers. My friend's vegetarian husband shops at Ozark Natural

Foods pretty often. And I think I saw on their website that they carry
