I used to bake biscotti a lot, and experimented with different fat levels. The

less fat in the recipe, the harder the cookie. You can't bite through the fat

free biscotti. But they are still great for dunking, just need to soak a bit.

I know up here Starbucks sells biscottis as hard as a rock, but when

you dunk them, they are very tasty. I was told that being hard is the

traditional way to serve biscottis.
