Maybe I could change the name to Par-Cil Pesto. Chico Tomatoes with Parsley Pesto 1 cup packed fresh parsley 1/4 cup snipped fresh chives 1 garlic clove 1/4 tsp salt Dash of Pepper 3 tbsp olive oil 2 tbsp red wine vinegar 3 medium tomatoes, cut into wedges In a blender, combine the parsley, chives, garlic, salt, and pepper. Cover and process until finely chopped. Add the oil and vinegar. Transfer to a large bowl. Cover and refrigerate until serving. Just before serving, add the tomaotes and toss to coat.
