Guest guest Posted August 23, 2007 Report Share Posted August 23, 2007 Pasta with Miso Pesto 1/2 cup minced spinach leaves 1/2 cup minced parsley 2 tablespoons olive oil 1 teaspoon minced garlic 1 tablespoon light miso 1/4 cup pine nuts, finely chopped 1 tablespoon dried basil 1 pound linguine Place spinach, parsley, oil, garlic, miso, pine nuts, and basil into a blender or food processor and puree until the mixture reaches the consistency of a paste. In a large pot over high heat, cook linguine in 2 quarts of boiling water until tender (7 to 8 minutes). Drain and toss with pesto. Serve hot. Serves 4. Boardwalk for $500? In 2007? Ha!
