But I really love the combination of spinach and feta, hence I will often blanch my spinach, add feta to the still hot spinach leaves and have that as a side dish, or use it as a topping on a large mushroom and then grill or bake it just to ensure the feta is melted. Or I might make a pastry with a spinach and feta filling. I also use it as a sauce for pizzas instead of the usual tomatoe sauce. It is quite delicious especially with artichoke hearts.
