Tue, 18 Oct 2005 12:28:22 -0500 Recipe: Thai-Style Coconut Soup adapted from http://www.livejournal.com/community/vegancooking/1572525.html?#cutid1 Thai-Style Coconut Soup1 tbsp. water 3 shallots minced2c thinly sliced mushrooms3c Veg Stock1 1/2 tbs fresh ginger1tbs tamari1tbs light brown sugar1sp Asian chili paste1 14oz can unsweetened coconut milk (or sub soymilk and coconut extract)6oz extra firm tofu, drained and cut into 1/4 inch diceJuice and grated zest of 1 lime2tbs fresh lemon juiceHeat water, add shallots , and cook until tender. Add the mushrooms. Stir in the stock ginger, tamari, sugar, and chili paste and bring to boil. Reduce heat to low and simmer. Stir in coconut milk, tofu, lime juice, zest and lemon juice and simmer until soup is hot.
