Recipe

Light & Fresh Summer Tabouli

Tabouli, a traditional Middle Eastern salad, is a fresh and healthy dish... perfect for a light summer lunch or side! Its use of bulgur offers a great source of plant protein and dietary fiber. Bulgur comes from wheat kernels that are partially cooked then dried and cracked, while still retaining 95 percent of the healthy bran and germ. This special wheat contains high levels of minerals such as calcium, phosphorous, and potassium, as well as antioxidants such as beta carotene, lutein, and vitamin K. Look for bulgur in the pasta, cereal, or specialty food aisle of your grocery store and give this mouth-watering recipe a try!

Ingredients:

2 bunches parsley 3 tomatoes1 cucumber6 green onions 2 garlic cloves 1 cup bulgur wheat 3 Tbs. curry juice of 2 lemons 3/4 cup olive oil black pepper (to taste)Directions:

 

Add 2 cups of warm water to the bulgur with curry powder mixed in. Soak (do not boil) for at least 30 minutes, stirring occasionally for the first 10 minutes. Clean juice and seeds from tomatoes. Finely chop parsley, tomatoes, cucumber, and green onion then add to bulgur. Send garlic through a press (or mash and finely chop). Mix bulgur, garlic, lemon juice, oil, and pepper (to taste). Serve chilled.

Don't Go Against the Grain

A recent health study examined women with a history of heart disease who reported having eaten six or more servings of whole grains per week. These women were found to have a slower progression of atherosclerosis, a condition in which built-up plaque in the arteries narrows the passageways through which blood flows.

The researchers studied dietary intake data taken from questionnaires and performed angiograms to assess changes in the volunteers' coronary artery diameter over a 3-year period. Other factors, such as the frequency of dietary intake of fats, cholesterol, essential nutrients and alcohol were also taken into account.The data suggests that following current dietary recommendations can slow the rate of heart disease progression. The 2005 Dietary Guidelines for Americans urges people to consume at least three servings of whole-grain foods per day. But experts say currently most Americans consume less than a single serving of whole grains daily.
