Guest guest Posted August 19, 2007 Report Share Posted August 19, 2007 * Exported from MasterCook * Slow Cooker Cranberry Ginger Compote - 3 pts Recipe By :Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann Serving Size : 9 Preparation Time :0:00 Categories : 3-4 1/2 quart Medium Round cooker Slow Cooker Vegetarian WW Points Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 5-inch fresh ginger root 12 ounces fresh cranberries -- rinsed and picked over for stems 1 cup sugar 1/4 cup water 1 orange zest -- grated, and juice of 1 orange 1/8 teaspoon ground clove 1/2 cup walnuts -- chopped 1/4 cup crystallized ginger -- chopped, optional Peel and coarsely grate the ginger. Take the grated ginger in your fist and squeeze out as much of the juice as you can into the slow cooker; discard the pulp. Leave two-thirds of the cranberries whole and chop the rest. Add all the cranberries to the cooker, along with the sugar, water, orange zest and juice, and cloves. Cover and cook on High for 2 to 2 1/2 hours; the whole cranberries will have popped open. While still hot, stir in the walnuts and crystallized ginger. Turn off the cooker, remove the lid, and let the compote cool in the crock to room temp. Scrape with a rubber spatula into clean spring-top glass jars (or use screw tops with new lids). Store, covered, in the refrigerator for up to 3 weeks. Serve chilled or at room temp.
