Guest guest Posted August 19, 2007 Report Share Posted August 19, 2007 * Exported from MasterCook * Curried Tomato-Pepper Soup Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons olive oil 1 cup chopped red onion 2 yellow peppers -- cored, seeded and cut into bite-sized wedges 4 cloves garlic -- minced 1 1/2 teaspoons ground cumin 1 1/2 teaspoons ground coriander 1/2 teaspoon curry powder 6 cups broth 4 plum tomatoes -- chopped 1/2 teaspoon cayenne pepper 1/2 cup whole-wheat couscous Salt to taste Heat oil in a large saucepan over medium heat. Add next 6 ingredients and saute for 5 minutes. Add broth, tomatoes and cayenne pepper and bring to a boil. Reduce heat to low and simmer, partially covered, for 20 minutes. Stir in couscous; simmer for 5 minutes more, or until couscous is tender. Season with salt to taste.
