Pistachio and Pink Grapefruit Charmoula -

2 large pink grapefruit -- sectioned

4 shallots -- peeled and minced

4 teaspoons finely minced garlic -- (about

4 large cloves)

1/2 cup extra virgin olive oil

1 teaspoon ground cumin

salt to taste

2 tablespoons harissa™

1 bunch cilantro -- washed, sprigged,

and roughly chopped (large bunch)

 

Combine all the ingredients in a small mixing bowl and

check the seasonings.
