Balsamic Vinegar & Fresh Herb Marinade

 

1/2 cup of less of olive or vegetable oil

1/3 cup balsamic vinegar or red wine vinegar

1 tablespoon chopped fresh basil leaves

1 tablespoon chopped fresh oregano leaves

2 teaspoon firmly packed brown sugar

1/2 teaspoon coarsely ground pepper

2 teaspoon finely chopped shallot

 

In medium bowl stir together all marinade ingredients.

Use to marinate (tofu and vegetables before grilling

or roasting).

Yields 1 1/4 cups.
