Potato And Pickle Salad 1 1/2 pounds red potatoes 1/4 cup soy mayonnaise 1/4 cup whole-grain mustard 1/4 cup prepared horseradish or fresh grated 1/4 cup pickle juice 1 medium onion 2 half sour pickles salt to taste freshly ground black pepper to taste Quarter the potatoes and boil until just cooked. Drain and rinse. Mix together mayonnaise, mustard, horseradish, and pickle juice. Transfer still warm potatoes to mixing bowl and blend in dressing. Chop pickles and onions to 1/4-inch dice and add.
