Cucumber soup~not TNT

A friend has made this for several people and its been very well recieved.

I'm making it tomorrow. AMy

 

 

Cucumber Soup – (20 min prep + chill time)

2 lg (2 lb ea.) cucumbers (or 4 smaller then that) – skin @ cut 2†chunks

2 cups plain yogurt (or I used : 1 & ½ C plain & ½ C vanilla)

Blend cucumber & yogurt together in batches until smooth

Stir in:

1-2 cloves garlic (finely minced)

1 tsp. white wine vinegar

¾ tsp salt

¼ white pepper

* I added chopped fresh basil

Cover. Refrigerate until well chilled (several hours or overnight)

To serve: Top each serving with:

slivered radish,

sprinkle sea saltfew julienne-cut basil leaves.
