Guest guest Posted August 16, 2007 Report Share Posted August 16, 2007 Greens and Pasta with Tofu 1 lb. cooking greens, spinach, chinese cabbage, bok choy, mustard, kale, chard, collards 1 onion, chopped 2 cloves garlic, minced 3 tbsps. olive 1 tomato, chopped 1 lb. tofu, diced salt, pepper oregano and thyme, chopped Sautee onion and garlic in oil until transluscent. Add tofu and saute 10 minutes. Add tomatoes and herbs and saute for 10 minutes covered. Add greens and cover. Cook for 10 minutes (until greens are completely wilted.
