Guest guest
Here is my MIL's corn relish recipe. Makes about 6 pints if memory serves. 8 C corn (about 14 uncooked ears) 4C chopped celery 1C chopped onion 2C chopped green pepper 2 C chopped red sweet pepper 2T salt if desired 1/2 t pepper 1 t celery seed 3C sugar or to taste 3C cider vinegar 1C water 2T dry mustard 3 T flour or enough to thicken 1t tumeric Cook to thicken, pack and can. We've added hot peppers to some batches for additional kick. We're too greedy to give it away but it would make a great gift. Some people like it with cream cheese on a cracker. I eat it on a cracker or just off a spoon. My mom loves it on sandwiches or hot dogs.
